The I Moresani farm produces only top quality meat. Our animals are given only healthy and natural food based solely on vegetable products grown with organic farming methods. We don’t use soya , only prime quality natural grains, corn, barley, broad beans, peas and hay. Our Podolian breed cattle are left to graze all year round in the hills sloping down towards Casal Velino and Pollica, while the calves, also Podolian, are kept in an open air paddock after spending a period of time at pasture. Therefore, our organic meat is prime quality, rich in nutrients and Omega 3.
FLAVOURS OF CILENTO
Looking for the traditional ancient flavours is our unicity.Those flavours ,often only a memory, are re-proposed by our family with an innovating taste following the worldfamous Meditterranean Diet. The wine cellar offers not only our excellent wine but also some of the best labels of the region Campania and National Park of Cilento. A little shop inside the farm allows you to buy our self-made products such as the highly appreciated goat-cheese also appreciated by the Slow Food Movement, made in our own little cheese factory.
TYPICAL FARM PRODUCTS FROM ORGANIC AGRICULTURE
Our aim is to prepare only organic products with genuine and high quality ingredients;to transform traditional recipes of the Meditterranean Diet in order to remain in the heart of those who will want to taste them. Everything is prepared by the family’s hands which have been working for years now with passion and knowledge. You can see it in the taste of our conserves, sweet and salty, sausages, salami, goat cheeses, extravergine olive oil, wine, liquors and honey.
MEAT
Fresh and processed in the traditional wayCURED MEAT PRODUCTS
Processed on our farmThe pork used for our cured meat products comes from organic pigs raised on our farm. We use natural food, no feeds or soya, only barley, corn, broad beans and field peas, for the most part grown on land in the National Park of Cilento. Vallo di Diano and Alburni. The choice of breed (Large white, Landrace and Duroc) raised on our closed-cycle farm, the processing, including the traditional curing method, all performed on our farm ensures prime-quality meat and thus prime quality cured products. Culatello, sausages, typical Cilento Soppressata, Capocollo, Cured Pork Fillet and bacon, all have the right meat-fat balance and a spicy aroma. For curing, we use the natural aromas par excellence: pepper grains, chili pepper, garlic and sea salt.
CHEESES
Fresh and mature cheesesFor years now, our farm has been involved in the production of goat cheese, both fresh and mature. Our goats are raised organically and therefore the goats have healthy and natural food, no OGM, no pesticides and they are left free to graze. Our products include the Slow Food Presidium Cilento Cacioricotta goats’ cheese , produced in the towns of the Cilento and Vallo di Diano National Park. The goats are milked by hand; the cheese is generally matured on wooden slats for two to three days for fresh cheese and 3 – 4 months for mature cheese. Moreover, our farm produces goats’ cheese matured in a grotto in straw and hay harvested in May. In addition to adding flavour and aromas with herbaceous notes to the taste, the so-called May hay retains the moisture naturally and leaves the cheese with a delicate but sharp flavour.
ORGANIC EXTRA VIRGIN OLIVE OIL
From our own olive treesOur olive oil was included in the Extra Virgin Olive Oils Guide published by Slow Food from 2007 to 2013 . Moreover, we won the Gold Medal at the BIOL 2014 international olive oil competition. The I Moresani organic extra virgin olive oil has a limpid aspect and a light green colour with traces of gold . Nose: medium-intensity fruitiness, with notes of green olive and artichoke leaves. The taste recalls the olfactory sensations accompanied by a delicate flavour and a slight bitter-sharp taste. To the touch it is only slightly oily. Harmonious.
CRACKED SALELLA OLIVES
Slow Food PresidiumAmong our prized products are the Slow Food Presidium Cilento cracked Salella olives: we choose the fleshiest olives on the tree which have still not begun to ripen and crack them open one by one with a sea-stone, patiently pit them and then subject them to a long process of washing and brining. When they are ready, our olives are marinated in extra virgin Salella olive oil with mint, oregano, etc.
PRESERVES AND TOMATO PUREE
Cilento flavoursThe vegetables to be preserved in oil come directly from our vegetable garden, rich in taste with a high quality, organic cultivation method. Aubergines, sweet peppers, artichokes, courgettes, marrows and chili peppers. They are processed by expert hands with traditional recipes and put into glass jars with organic extra virgin olive oil.
Moreover, I Moresani produces and processes its own tomato preserves. Our production is limited to the month of August and early September, when tomatoes are perfectly ripe.
MARMALADES AND JAMS
Made only with natural produceOur marmalades and jams are all produced from citrus and other fruit from our orchards and are processed on a seasonal basis.
Plant Biodiversity, organic farming, and the Mediterranean climate all contribute to enriching our produce with unique flavours and aromas. You can always find jams and marmalades in our small shop or order them subject to the tastes and produce available.
FLOUR FROM ANCIENT GRAINS
Grown and ground by usAncient grains are those not manipulated by modern man and therefore not genetically modified over the years but original and whole. They are grains with high nutritional properties and low gluten content, ideal for those who wish to rediscover the taste of natural and healthy food. Our farm has been involved since July 2015 in the responsible organic sowing of two ancient grains: a durum grain called Senatore Cappelli and a soft grain called Gentil Rosso . The flour ground from these grains is on sale in our farm shop.
BISCUITS
Prepared by handFrom a perspective of rediscovering “poor products”, we decided to use carob beans for preparing some of our traditional biscuits: carob beans are gluten-free and thus suitable for Celiac sufferers. They also have antioxidant, cholesterol-lowering and satiating properties. Moreover, we bake biscuits with top quality almonds and flavoured with the lemons from our organic orchards. With the same organic lemons, we also prepare delicious brittle, friable and crumbly golden brown biscuits.
PULSES
Grown in our fieldsOur dried beans “Controne” and chick peas come from our strictly organic pulse cultivation. Our pulses are grown on land in the Cilento and Vallo di Diano and Alburni National Park,. You will always find dried pulses in our small farm shop or order them subject to availability.
