Organic beans from Controne
A Cilento white bean grown in the Alento River Valley using organic methods; it is a small legume with small round seeds and no marks or eyes. It goes back to the Roman era and is prized for its high digestibility and soft skin, practically imperceptible.
The seeds, chosen and conserved by us are sown in July, in rows, in fields fertilized exclusively with organic substances. The pods are hand-picked between October and November, when they have fully dried on the plant. They are then laid on a cotton sheet for about 10 days. The beans are then shelled mechanically and placed on the ground again for a few days in order to complete exsiccation.
Controne beans lend themselves to a variety of uses: they can be used as a salad or together with escarole, in pasta and bean soup or as a dressing for Lagane pasta (fresh homemade pasta).
